3 Healthy Oatmeal Recipes For The Family’s Breakfast
Power oatmeal!
Oatmeal is a great way for the whole family to start the day, quick and easy to make, filling and especially comforting for this time of year as it starts to get colder. It’s what’s added to the oats that really makes a delicious breakfast and one that every family member can get on board with. Here are three easy and delicious ways to serve oatmeal, packed with nutrient rich ingredients like fruit, veggies (it works I promise!), and seeds.
Oats are a rich source of fiber, iron and many essential minerals. They are metabolized slowly, providing a longer release of energy. Oats are also great immune boosters, perfect at this time of year as colds are common.
Oatmeal with spiced baked fruits
Serves 2 with leftover fruit
These baked fruits make a delicious, easy dessert too, serve hot with whipped cream.
INGREDIENTS
- seasonal fruits to taste – suggested: apples, figs, blackberries
- 5 cardamom pods
- 1 tbsp honey
- 3.5 oz rolled oats
- 10 oz. milk
- 6.5 oz water
METHOD
Heat the oven to 350°F.
Crush cardamom pods using a mortar and pestle. Put the fruit into an ovenproof baking dish (if using apples or pears, peel, core and roughly chop them first) and toss the fruit in the cardamom and honey. Bake the fruit in the oven for 20-30 minutes until soft. Store in the fridge in an airtight container until ready to use.
To make your oatmeal, bring the oats, water, and milk to a light simmer and leave to cook for 10 minutes, stirring regularly — this helps create a creamy texture. Top with baked fruit and serve.
Squash, cinnamon & honey oatmeal
Serves 2
A yummy take on a carrot cake using squash or pumpkin.
INGREDIENTS
- 1 small squash/pumpkin, grated
- 3.5 oz. rolled oats
- 10 oz. milk
- 7 oz. water
- 1 tsp cinnamon
- Drizzle of honey
METHOD
Bring the oats, water, milk and grated squash to a light simmer and leave to cook for 10 minutes, stirring regularly.
Mix in the cinnamon and honey and serve.
Tip: Roast the rest of the pumpkin or squash and add to salads or soups!
Banana & chocolate oatmeal
Serves 2
This combination is always a hit with kids!
INGREDIENTS
- 3.5 rolled oats
- 10 oz. milk
- 7 oz. water
- 1 banana, mashed
- 2 tsp cocoa powder
- Drizzle of honey
- Handful of mixed seeds
METHOD
Put all the ingredients except honey and seeds into a pan over a medium heat and bring to a simmer. Cook for 10 minutes, stirring regularly. Top with honey and seeds and serve.
